| 内容記述 | 《目的》学校給食調理員の衛生管理に対する情報収集意欲と食育及び衛生管理意識に関する項目との関連について検討すること。 《方法》学校給食調理場に在籍する調理員208名に対しアンケート調査を行った。 《結果》情報収集群の者は、学校給食に従事している経験年数が長く、栄養教諭等の職務内容を理解しており、日常の中で児童・生徒と接する機会があり、年１回以上何らかの食育活動に参加している者が多かった。また、情報収集群の者は衛生管理に関するマニュアルへの理解や、衛生管理に関する知識をより一層高めていきたいと回答した者が多かった。 《結論》衛生管理について自主的に知識を高める行動や情報の収集を行っている調理員と食育及び衛生管理意識には関連があった。学校給食調理員が栄養教諭等の職務を理解した上で学校給食に主体的に携わってもらうためには、衛生管理及び食育に関する情報の提供及び解説等の支援、研修会の開催等を積極的に実施する必要がある。 |

| 内容記述 | Objective：The purpose of this study was to examine the relationship between the willingness of school lunch cooks to proactively collect information on hygiene management and items related to food and nutrition education and hygiene management awareness. Methods：A questionnaire survey was conducted on the 208 cooks working in school lunch kitchens. Results：The results of the survey were as follows:（1）the number of years of experience in school food service,（2）understanding of the duties of nutrition teachers,（3）opportunities to interact with children and students in daily life, and（4）participation in some kind of food and nutrition education activities at least once a year. Those in the information collection group were more likely to have an understanding of hygiene management manuals and to want to further improve their knowledge of hygiene management. Conclusion：There was a relationship between the cooks who voluntarily took actions to improve their knowledge of hygiene management and collected information and their awareness of food and nutrition education and hygiene management. In order for school meal preparers to understand the duties of nutrition teachers, and be involved in school meals, it is necessary to actively provide information and hold training sessions. |
